We are thinking about planting a couple of citrus and a couple of fig trees. When is the best time to plant these and what are the best varieties. Due our yard orientation, these will be in full sun.
You can plant figs now. I'd wait until the end of February to plant citrus. Citrus get a little stress when first planted, and with the possibility of a freeze in mid February, I'd wait to be safe.

When is the best time to plant a Gala Apple tree here in the valley?
We are coming up on the best time to plant deciduous trees, apples, peaches, plums, nuts,etc. Mid September until the end of November is a great time to plant. It gives the trees a chance to get some root growth and store away some food before dormancy.
But keep an eye on the soil. We can still get some wickedly hot days in Sept. You don't want your new tree drying out.
